1.童子鸡半只洗好沥干,放到凉水锅,加老姜片大火煮开2-3分钟 转小火煮10分钟,焖半小时(忘记拍照)。

2.焖好的鸡捞出来放到凉水里浸泡,加冰块,等待晾凉约十来分钟的时候准备下佐料,红椒记得用盐码味,备用。

3.锅中把油烧热,关火;放入青花椒,倒出来。

4.过滤,用下面的藤椒油来做汁儿要用。

5.油温不可太高。

6.将完全冷却后的鸡块沥干后,改刀切块。

7.摆盘码好。

8.将两勺生抽,适量鸡汤,盐,胡椒粉,和藤椒油,小米辣完全混和。

9.将碗汁儿浇上去即可,放上去一些青花椒做点缀。

10.盛夏时节,可放入冰箱冷藏1-3小时口感更加。
